TOPPINGS

Pancake Syrup recipe:

3 cups sugar
1 1/2 cups water
3 Tbs molasses (if you don't have molasses, use 3 cups of brown sugar in place of the granulated sugar and then skip this ingredient)
1 tsp vanilla
2 tsp butter flavor (I never buy butter flavor.  I just put 1 TBS real butter in the recipe)
1 tsp maple flavor (I buy this at Walmart.)

Real simple to do.  Put everything into a sauce pan.  Stir well.  Cook it over med/low heat until it comes to a full rolling boil.  Turn off the burner, leaving the pan on the burner to cool.  Once cool, store in the fridge.  I like to reheat the syrup when I am using it on pancakes or waffles.  Just don't stir it.  It will make it crystallize a little.  Which honestly makes a great candy.  Ooops!  I outed myself. LOL

Chocolate Syrup

1 cup cocoa powder
1 1/2 cups sugar
1/4 tsp salt
1 tsp vanilla
1 cup hot water

Mix the cocoa, sugar, and salt in a medium sauce pan.  Add the hot water and stir.  Cook on medium low heat until it starts to boil.  Once it boils, turn off the burner and let cool on the burner.  Once cool, add the teaspoon of vanilla extract.  Mix well.  Makes about 2 cups of syrup.  Store in fridge.  Great for topping frozen (or not) Strawberries, Cherries, or bananas.  I will usually take whatever fruit I'm using and top with 2 oz of vanilla whole milk yogurt and 6 grams of chocolate syrup.  Makes a great snack or dessert.  I also use this to top my Chocolate pumpkin cake recipe, or mix a little in some milk and heat it for great hot chocolate.

Ranch dressing/dip

1 cup mayo
1/2 cup sour cream
1/2 cup milk
2 tsp lemon juice
1 tsp onion powder
1/3 tsp garlic powder, or you can use 1 clove of garlic minced
2 tsp parsley (or 2 TBS fresh)
dash of dill weed
1/2 tsp salt
1/2 tsp season salt (use mine)
dash pf pepper

Mix all ingredients in a bowl, or I use the mason jar I will store it in (saves dishes).  This is best chilled over night in the fridge.  You can also omit the mayo and milk and just use a 2 cup container of sour cream to make a dip.  I can never find mayo I like that doesn't have a weird oil in it.  Olive oil mayo is nasty to me.  So I use this recipe with only sour cream.
