Mixes and condiments

 Spaghetti Sauce Mix:  

This will fill a quart jar and make 12 servings of mix.  Use 2.33 TBS of the mix for a quart of tomato sauce with or without meat.

4 TBS ONION POWDER

2 TBS GARLIC POWDER

4 TBS DRY BASIL

1 TBS OREGANO 

12 TBS SUGAR

4 TBS SALT

Mix all together and store in a quart size jar or container.


Cowboy Candy

3 lbs of Jalapeno Peppers
2 cups Apple Cider Vinegar
6 cups sugar
3 tsp garlic powder
1/2 tsp dry mustard
1/2 tsp celery seed
1 tsp cayenne pepper
Remove stems ends and slice peppers.  Wear rubber gloves!  To make less hot you can remove the seeds and membranes, but I just slice them, keeping everything.  Mix the sugar, vinegar, and spices in a deep stock pot.   This has to be a deep pot or the syrup will boil over.  I learned this the hard way.  Don't fudge on this.  Bring to a boil.  Reduce temp and simmer for 5 minutes.  Add the  sliced peppers.  Simmer 4 minutes.  Remove all the peppers with a slotted spoon, leaving the syrup in the pot.  Set the peppers aside.  Bing syrup to a hard boil that can't be stirred down.  Boil 5 minutes.  Remove from heat.  Pack peppers tightly into clean hot pint or half pint jars.  Cover with syrup, leaving 1/2 inch head space.  Wipe rims.  Place lids and rings on jars.  Process pints and half pints for 20 minutes.

Ketchup

1 can tomato paste
1/3 cup distilled vinegar
1/2 cup water
1/3 cup sugar
3/4 tsp salt
Good dash cinnamon
Good dash paprika
1/3 tsp ground allspice
Good pinch of ground mustard
Good pinch of celery seed
1/2 tsp onion powder


Whisk all in sauce pan and simmer about 5 minutes.  That's it.  I put the homemade ketchup in an existing ketchup bottle and no one is the wiser.  It's good.  Seriously.  Never buying ketchup again.  that one little can with vinegar, spices, and water made about 18 oz of ketchup.  The cheapest ketchup I can find that has no high fructose corn syrup in it is about $2 for 16 oz, and that's not even organic!  Mine cost me about .40 cents. I'd say win win!




KETCHUP # 2

12 oz can of tomato paste
1 Tbs onion powder
1 tsp cayenne pepper
2 tsp salt
3/4 cup water
3/4 cup infused vinegar ( don't worry I'll show you)
1/2 cup sugar

Combine all in a pan and whisk together on a medium low heat.  As it heats up it will be easier to get it all blended.  Let simmer on low for about 20 minutes,  Cool and store in the fridge.  Use like you would any store bought ketchup.  

TO MAKE INFUSED VINEGAR

3 cups cider vinegar
3 Tbs celery seed
4 tsp whole cloves
2 cinnamon sticks 4 inch each broken in pieces
1.5 tsp whole allspice

Tie all the spices in a bag.  Place in cider vinegar in a pot.  Place on stove and bring to a boil on high heat.  Turn off  burner nd let the vinegar steep for 25 minutes.  You used 3/4 cup for each batch of Ketchup, so once you make this, you can store it in  your fridge until you need it next time.  This should make enough vinegar for 4 batches of Ketchup.  

By my calculations based on prices in my area, this makes a 30+ oz bottle of Ketchup for about .80.  To buy generic brand here is about $1.28 for the same size.  To find generic ketchup with no chemicals or high fructose corn syrup is $1.78, so almost a dollar saved per bottle.  Nice!



Homemade Biscuit mix (this can be used where ever Bisquik is called for)
5 cups self rising flour
3 TBS sugar
1 cup Lard
1 cup dry milk

Mix together the flour and sugar.  Cut in Lard until it looks crumbly.  Stir in the dry milk.  Store in an ari tight container in the fridge.


Sweetened Condensed milk

2 cups whole milk
3/4 cup of sugar
1 tsp vanilla

On med/low heat whisk the milk and sugar together. Keep stirring occasionally while the milk mixture reduces by about half ( you're shooting for 14 oz. I weigh mine to get it exact). Once reduced, remove from heat and add the vanilla.  Mix well. Makes 12-14 oz and you can use this recipe anywhere sweetened condensed milk is called for.

So after you have your sweetened condensed milk ready, and it will still be warm, which you want.   Now for your

Flavored coffee creamer:

Sweetened condensed milk (what you just made)
1/2 cup additional sugar (white or brown)
1 3/4 - 2 cups milk preferably whole (cause it will be creamier)
2-3 tsp vanilla extract - you can go nuts at this point.  Season it in whatever way you want. This is how you make your creamer your own.  You can use extracts of different flavors, or coffee syrups, spices like cinnamon or nutmeg.

You are gonna mix all this up in the order I have listed it.  There is a method to my madness.  The sugar added to the still warm homemade sweetened condensed milk will allow it to dissolve easier.  Now if you choose to use a powdered spice like cinnamon or Cocoa powder, adding them before the milk will also allow them to dissolve better.  Syrups and extracts can be added whenever.

This recipe makes about 32 oz of creamer. Cost here of $1.26 using store bought vanilla extract and store bought milk, and white sugar.  .

Cream soup mix

1 1/2 cups dry milk
3/4 cup all purpose flour
1 ts salt

mix all together then cut in

1 stick of  butter.  Store in an airtight container in the fridge.  To use for plain white sauce just use 1/3 cup mix to 1 cup of water.  If you want cream of chicken, use chicken broth, cream of mushroom: open a can of mushrooms and drain, add water to the mushroom liquid to equal 1 cup fluid. Then follow the rest of the recipe.  You can also add 1 cup of cheese and 1 ts yellow mustard to make cheese sauce.


Beet Berry Jelly

4 cups beet juice (Or in my situation a mixture of beet juice and fruit juice.  Any type juice would work except OJ)
1/2 cup lemon juice
1 pkt sure jell
6 cups sugar

In a large pot mix the beet/berry juice, lemon juice, and sure jell(Pectin).  Bring to a rolling boil for 1 min.  Add the sugar.  Bring back to a rolling boil and let boil for 3 minutes.  Have some clean, hot, jelly jars ready.  Fill each jar leaving about a 1 in head space.  Wipe rims and put on your sterilized lids and rings.  Process in boiling water bath canner(With jelly jars I just use a reg stock pot.  You just need to have a pot deep enough to cover the jars by 1.5 to 2 in of water) for 10 min. Makes about 8 jelly jars. 

Pancake Syrup:

3 cups sugar
1 1/2 cups water
3 Tbs molasses (if you don't have molasses, use 3 cups of brown sugar in place of the granulated sugar and then skip this ingredient)
1 tsp vanilla
2 tsp butter flavor (I never buy butter flavor.  I just put 1 TBS real butter in the recipe)
1 tsp maple flavor (I buy this at Walmart.)

Real simple to do.  Put everything into a sauce pan.  Stir well.  Cook it over med/low heat until it comes to a full rolling boil.  Turn off the burner, leaving the pan on the burner to cool.  Once cool, store in the fridge.  I like to reheat the syrup when I am using it on pancakes or waffles.  Just don't stir it.  It will make it crystallize a little.

Shake and Bake

4  cups flour
4 cups ground cornflakes cereal (grind these in the blender.  Works like a charm)
2 Tbs sugar
4 Tbs salt
2 tsp garlic
2 tsp onion powder
3 Tbs paprika

Mix all and store.  This makes a lot!  I will usually measure out a little to use.  I dip the meat into the shake and bake, then into an egg/milk mixture (1 egg and about 1 cup milk mixed together well)then back into the shake and bake.  Spray your cookie sheet or baking pan with Pam.  When you have dipped each piece and laid them on the sheet, spray them once again with Pam(cooking spray).  Then bake them til brown and crispy.


Taco Seasoning

1/3 cup of onion powder (or 3/4 cup dried onion flakes)
1/2 cup chili powder
1/4 cup salt
3 TBS garlic powder
3 TBS of corn starch
3 TBS cumin
1 TBS-3 TBS cayenne pepper (depending on how hot ya wants it)

Mix all in a bowl and store, or you can do like I do and put it all in a mason jar and shake, shake, shake.
*** Frugal tip.  When making your tacos, use 1 lb ground beef, 1 cup black beans, and 1 can corn in place of 2 lbs ground beef.  Stretches the meat and makes a healthier taco.

Season salt

8 TBS Salt
3 TBS Pepper
2 TBS Paprika
1/2 TBS Onion Powder
1/2 TBS Garlic Powder

Mix all in a bowl and store, or you can do like I do and put it all in a mason jar and shake, shake, shake.
*** GREAT ON OVEN FRIES!


Chocolate syrup

1 cup cocoa powder
1 1/2 cup sugar
1/4 tsp salt
1 cup boiling water
1 tsp vanilla

In a sauce pan, mix the cocoa, sugar and salt well.  Add the boiling water.  Cook 5 more minutes stirring constantly.  Cool slightly.  Stir in Vanilla.
What I will usually do, cause I am lazy and don't like washing more dishes than necessary, is;  instead of adding boiling water, I will just add hot tap water.  Stir it once really well.  I bring the whole shebang to a boil and then turn the stove off, letting the syrup cool on the burner.  Add your vanilla then and store in the fridge.  Makes about 2 cups.  *** personal tip.  This is great served with fresh strawberries for a cool healthy treat, or have fun and have chocolate milk or ice cream sundaes.

Oh and it seems I forgot to add cinnamon sugar.  Uh real easy.  1/2 cup sugar to 1- 2 TBS ground cinnamon.  Shake.


MY SALSA

10 CUPS CHOPPED, SEEDED ROMA TOMATOES about 6 lbs(I like Romas cause they have less water and seeds and are a little sweeter.  I also don't peel my tomatoes cause you lose alot of the nutrients that way)
5 CUPS CHOPPED AND SEEDED GREEN BELL PEPPERS about 2 lbs
5 CUPS CHOPPED ONIONS  about 1 1/2 lbs (use the food processor you will thank me)
2 1/2 CUPS CHOPPED SEEDED HOT PEPPERS about 1 lb
1 1/2 CUPS CIDER VINEGAR
3 CLOVES GARLIC, MINCED
2 TBS CHOPPED FRESH CILANTRO
1 CAN TOMATO PASTE
1 TBS CUMIN
3 TSP SALT
1 TSP HOT SAUCE (OPTIONAL IF YOU WANT IT REALLY HOT)

COMBINE ALL INGREDIENTS IN A LARGE POT, ADDING HOT PEPPERS SAUCE IF DESIRED.  BRING MIXTURE TO A BOIL.  REDUCE HEAT AND SIMMER 10 MINUTES.  LADLE HOT SAUCE INTO HOT JARS,  LEAVING 1/4 IN HEAD SPACE.  WIPE RIMS AND PLACE LIDS THEN RINGS.  PROCESS 15 MINUTES IN A BOILING-WATER CANNER.  YIELD IS 6-7 PINTS.
*when chopping hot peppers be sure to wear gloves.  You will regret it if you don't especially if you touch your eyes.  Trust me on this.  I have had this happen before.  Fun!



PIZZA CRUST

1 1/3 CUPS  WATER SLIGHTLY WARM (ABOUT 105 DEGREES)
1/4 CUP DRY MILK
1/2 TSP SALT
1 TBS SUGAR
2 TBS OLIVE OIL
2 TSP YEAST
4 CUPS FLOUR

You can put everything into a bread machine on the dough setting or you can do it like I do.  Take your water and put into a large mixing bowl.  Add your dry milk, sugar, oil, and salt.  Sprinkle your yeast over the top and let it bubble a second or two.  Add about 2 cups of flour and whisk it really well, then stir in as much of the remaining flour as you can with a spoon.  Turn onto a floured surface and knead a couple of minutes using just enough flour to keep your dough from being sticky.  Pour a little bit of oil back into your mixing bowl.  Take you dough and put it back into the bowl turning a few times to make sure you cover the dough well with oil.  Let rise in the bowl for about 25 min.  It won't rise too much, but punch it down and knead it a little more.  Cut into two crusts.  Press the crusts into the pizza pans.  This will take a bit cause you will press a few minutes and then let it rest a few minutes, then press some more til the pan is covered with the crust.  Put your sauce and toppings on and bake at about 425 for about 10 minutes or util the cheese is good and bubbly.  This is even more economical if you use your own homemade tomato sauce.


RANCH DRESSING

1/2 CUP SOUR CREAM
1 CUP MAYONNAISE
1/2 CUP MILK
2 TSP LEMON JUICE
1 T ONION POWDER
1/2 TSP MINCED GARLIC OR ABOUT 1/3 TSP GARLIC POWDER
2 TSP PARSLEY
DASH DILL WEED
1/2 TSP SALT
1/2 TSP SEASON SALT (SEE MY HOMEMADE)
DASH PEPPER

I put all of this in a quart mason jar and whisk it all together.  Then chill an hour or so to let everything blend.  I've also used this in 2 cups of whole milk greek yogurt (plain) for a dip.  It is awesome as a dip.

Homemade Poultry Seasoning

2 tsp ground sage
2 tsp Thyme
1 tsp Marjoram
3/4 tsp ground rosemary ( I used the ole mortar and pestle)
1/2 tsp nutmeg
1/2 tsp ground black pepper.

Just add everything to a jar and shake well.  Just keep it in your spice cabinet for use whenever you need poultry seasoning.

Homemade pumpkin pie spice

4 tsp cinnamon
2 tsp ground ginger
1 tsp ground cloves
1/2 tsp ground nutmeg





QUICK BREAD MIX

12 CUPS FLOUR, ALL PURPOSE
3 CUPS SUGAR
3 CUPS BROWN SUGAR
2 TBS BAKING POWDER
2 TBS BAKING SODA
1 TBS CINNAMON
1 TBS NUTMEG
1 TBS SALT
1 TBS GROUND CLOVES

MIX IT ALL TOGETHER AND STORE UNTIL USED

TO USE:
3 1/2 CUPS MIX
1/3 MELTED BUTTER
2 EGGS BEATEN
1 CUP FRUIT OR VEGGIE PUREE(THIS IS WHERE YOU USE ALL THE ZUCCHINI YOU'LL GROW)
1 TBS MILK OR LEMON JUICE IF MAKING BANANA BREAD

MIX ALL TOGETHER THEN BACK IN A 325 OVEN TIL DONE.
