BREAKFAST




Granola

5 cups of oats( or whatever grain, nut mixture strikes your fancy)
1 tsp ground cinnamon
dash salt
3/4 cup sugar
1/3 cup butter
1/3 cup maple syrup, honey, or molasses
1 tsp vanilla  extract

Pre-heat oven to 350 degrees.  In a sauce pan, heat the butter, sugar, vanilla, and syrup on a med low heat.  While that is heating up, take your oats(etc), cinnamon, and dash salt and mix thoroughly in a greased cookie sheet.  Take the "syrup "and pour over your grains.  Mix as well as you can with a spoon, then put the spoon down and use your clean hands to incorporate it well.  Once mixed well put it in the oven for 10 min.  Take out of the oven.  Stir well, and put back in the oven for 5 minutes.  Remove from oven and stir again.  If you want to put raisins in it do so now; about 1/2 cup.  Stir those in then let the put back into the oven for a last 5 minutes, but turn the oven off.   After 5 minutes, remove from oven and let the granola sit til it is cool.  Once cool,  break up.

Sugar free/dairy free granola

4 Cups Oats
1/2 cup brown rice flour
1/4 cup flax seed, ground
1/4 cup wheat germ
1/2 cup chopped peanuts
1/3 cup coconut oil
1/2 cup raisins
2/3 cup maple syrup
1 ts ground cinnamon
1 ts pure vanilla extract
dash salt

Preheat oven to 350 degrees.  In a good size greased (with coconut oil)cookie sheet mix all of the dry ingredients reserving the raisins  In a small sauce pan take your honey and coconut oil and melt together.  Bring to a boil then remove from heat.  Add your vanilla to the syrup mixture.  Pour over your dry ingredients.  Mix well, using your hands when able to do so.  Spread evenly in the pan.  Bake in oven for 20 minutes, removing from oven to stir and re-spread after 10 minutes. After the 20 min, take out of the oven and stir in the raisins.  Let cool without disturbing.  Store in an air tight container.

Butterscotch Granola

5 cups quick cooking oats(Or whatever variety of grains you would choose; oats, wheat germ, rice flour, barley, coconut, etc.  Make your largest contribution be oats and then just add extra of the other grains to make 5 cups)

1 ts cinnamon
dash salt
1 stick butter
1/2 cup brown sugar
1/4 cup honey
1 tsp vanilla
1 tsp butter flavored extract

Butter a large cookie sheet.  In it place  your grains, cinnamon, and salt.  Mix well.  Put aside.  In a sauce pan melt the butter.  Add in the sugar, honey, vanilla, and butter extract.  Heat just until melted well and sugar is dissolved.  Pour syrup mixture over your grains.  Mix with a spoon as much as you can,  but then go thru it with your hands to make sure it is really well incorporated (Wash hands first please!).  Spread out evenly on the cookie sheet and bake in a 350 oven for 10 mins.  Take the cookie sheet out and stir thoroughly then put back in the oven for 5 min.  Take from oven but don't stir.  Let it cool where it sits.  Once cool you can store it in an airtight container.



Breakfast Sausage

1 lb ground meat (I use pork)
1 tsp garlic powder
1 tsp thyme
1 tsp minced onion
1 tsp basil
1/2 tsp black pepper
1/2 tsp chili powder
1/2 tsp sage
1/2 tsp parsley
1/4 tsp salt



Take all your spices and mix together in a bowl.  Add the ground meat and mix well with your fingers til everything is blended well.  You can either do this ahead of time and let sit in the fridge covered til morning, or you can do this in a pinch like I did this morning.  I like to do it a head of time, but forgot to lay out the ground pork to thaw.  Oops! A serving is 4 oz pre-cooked.  I measure it out into 2 oz patties to fry.

Calories- 140, Carbs- 0, Fat- 4 gm, Protein- 23 grams

***If you want to make Italian sausage, just add 1/2 tsp fennel seeds (Or to taste) to your spices.  Then you can brown it and add to pizza, lasagna, or any other Italian dish.***

*** If you make sausage cheese balls like I do during the holidays, you can substitute this sausage for the sausage called for in the recipe.  You may need to add a little milk if the dough is too dry.  I do this every holiday and, while it may not stem the tide of calories much, every little bit helps.***

*** When I have this for breakfast I will have 2 pieces of sausage and 1 biscuit or two pieces of sausage and a baked apple.  Plus coffee of course.

Spinach and Cheddar Crustless Quiche

1 cup milk
1/4 cup water
3 eggs
1/2 cup cheddar cheese
1 cup chopped spinach
1 cup flour
1/4 chopped onion
season to taste w salt and pepper

Put all of this in a blender and pulse a few times til it is all mixed/chopped together.. Pour into a greased or sprayed pie plate or in my case and iron skillet.  Bake 350 degrees til set.  Bout 30 min.  Makes 4 large servings.

Calories- 249, Fat-10 gms, Carbs-27 gms, and Protein- 13 gms


Cranberry Orange Quick Bread

1 cup plus 2 TBS flour
1.1/4 cups sugar
3/4 ts salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking soda
1 cup milk
2 TBS oil
1 Egg
1-2 TBS grated orange peel
1 1/2 cups spent cranberries (you can probably soften dried cranberries to add)

Mix together dry ingredients then add the milk, oil, egg, and orange peel.  Mix well then stir in the cranberries.  You can add nuts also, but I didn't.  Pour all into a loaf pan and bake 325 degree for an hour or until a toothpick inserted in the center comes out clean.

"SELF RISING" CINNAMON ROLLS

1 1/2 cups flour (I use half white and half wheat pastry flour)
3 TBS sugar
1 1/2 TBS baking powder
1 1/2 tsp salt
1/2 cup shortening
1 cup milk

FILLING

3 TBS softened butter
liberally sprinkled cinnamon sugar
1/3 cup chopped nuts(optional)
2 TBS raisins(optional)
1 TBS choc chips

Icing
3/4 cup powdered sugar
1 tsp vanilla
dash salt
2-3 TBS milk or enough to make a syrupy glaze

To begin, preheat your oven to 400.  In a large mixing bowl, combine the first 4 ingredients and mix well.  Cut in the shortening until you have a crumbly mix.  Add the one cup of milk and lightly toss until everything is incorporated.  Dump out onto your now floured counter.  Knead just enough to form it into a ball (about 8 times).  Roll out into as much of a rectangle as you can make  and it be about 1/2 in thick maybe a little thinner.  Spread with butter.  Sprinkle with cinnamon sugar, nuts, raisins, choc chips.  Roll up jelly roll style.  Slice into 12 rolls and put in an ungreased 9 X 13 pan.  Bake about 20=25 min or until golden.  Remove from oven.  Pour icing over the top while still hot.  Serve.  Enjoy!
