Garlic Parmesan Bread Sticks

3 cups all purpose flour
1 TBS Baking powder
1/2 tsp salt
1 tsp garlic powder
1 cup milk
1 stick of butter or margarine
Another tsp garlic powder
Another 1/2 tsp salt
2 TBS Parmesan cheese

Place butter/margarine in a 9x13 dish and put in the oven. Preheat oven to 400 degrees and allow the butter/margarine to melt. While that's melting, mix together flour, baking powder, 1st 1/2 tsp salt, 1st tsp of garlic powder. Add milk and mix well. If you need a little extra milk, that's okay. You want this to be the consistency of biscuit dough. Once mixed well, turn out onto a floured surface and roll out into a rectangle about the size of your pan. Cut into sticks. I cut mine in half length wise and then into strips across from there. Take out your pan. The butter should be melted. Sprinkle the melted butter with the 2nd salt, 2nd garlic powder, and parmesan cheese. Take your bread sticks a few at a time and put in the pan; running one side thru the butter mixture and then flipping over in the pan to make sure the breadstick is covered in the butter mixture. Once this is done to all the bread sticks, bake in the oven for 15 minutes until golden brown.
Tomato soup no funny business.
Was in the mood for tomato soup, but hard to find it without high frustose corn syrup. What's a girl to do?
1 6 oz can tomato paste
1 6 oz can water
Put those two things in a sauce pan on med/low heat
Add: 1/2 tsp baking soda, a bay leaf, a pinch of ground cloves, a pinch of celery seed, a pinch of minced onion, 1/2 tsp dry parsley, and salt to taste.
Stir that around until the tomato paste, water and spices are mixed together well.

Add 2 6 oz cans whole milk.
Mix well and heat thru.
Makes about what a can of Campbells soup will. Since the can of soup would require milk to be added as well, we will just compare the cost of a can of soup to a can of tomato paste.

Dinner Rolls ( This is what I use for Cinnamon Rolls, Gorilla Bread, and Raisin Bread)

4- 4 1/2 cups flour
1 pkg of yeast (or 1 TBS)
1 cup milk
1/3 cup sugar
1/3 cup butter
1 ts salt
2 eggs

In a small saucepan, add your milk, butter, sugar, and salt.  Heat milk mixture just until the butter is just about melted.  While that heats up, put 2 cups flour and yeast in a large mixing bowl and mix together.   Once milk is hot (120 degrees) dump into the flour mixture and add the two eggs.  Mix all together for about 100 strokes.  Stir in as much remaining flour as you can with a spoon.  Dump out onto a floured counter.  Knead dough 10-12 minutes adding just enough flour to keep dough from being sticky as you work.  Once dough starts to tear, it's time to stop kneading (or if the timer goes off).  Place dough in a greased bowl, turning once to coat.  Cover, Let rise no more than 30 minutes.  Punch down, shape into desired rolls.  Place in the pan you will use.  Cover and let rise until double.
Bake 350 degrees for 15-20 min or until golden on top.  Or you can just put the whole thing in the bread machine; liquids first, sugar, salt, flour, yeast being last.  Put on dough setting and go read a book.  Then shape how you want weather it's dinner rolls, cinnamon rolls, or Gorilla bread



Cuban Bread

5-6 cups flour
2 TBS yeast
1 TBS salt
2 TBS sugar
2 cups hot water

Put 4 cups of flour in your mixing bowl with your salt, yeast, and sugar.  Mix together.  Dump the 2 cups of hot (110-115)water into the bowl.  Stir 100 strokes or 3 min with a mixer.  Stir in asmuch remaining flour as you can with a spoon.  Dump out on the counter and knead dough for 8 minutes (you can do this in smaller batches of minutes at a time).  Shape into a ball and put in a greased bowl turning once to coat.  Let rise 15 min.  Punch down and divide into 2 loaves.  Shape each into a ball and place on a greased cookie sheet.  Slash an "x" in the top.  Brush with water and sprinkle with sesame seeds if desired.  I let mine rise a little extra here because I like a lighter loaf, but you don't have to.  Let rise 10 minutes at least.  Place a cake pan in the bottom of the oven and pour boiling water init.  Place the loaves in the oven and then preheat to 400.  Bake 40 minutes til golden brown.


Flour Tortillas

4 cups all purpose flour
1 ts salt
1/4 ts baking powder
1.4 Cup of lard or softened butter
1 cup ( plus up to 2 TBS ) warm water

Mix the flour, salt, and baking powder.  Cut in the lard/butter (I used Lard).  Add the water little by little, tossing to mix.  If you need to add the extra 2 TBS of warm water, you can, but do it a little at a time.  You want the dough to stick together, but not be real sticky.  You'll add water, toss, add water, toss, until the dough forms a ball.  Just until the dough forms a ball.  Divide the dough into 16 equal pieces and shape them into a ball.  Cover them and let rest for 15 minutes.  Once 15 minutes have past, take each ball and, on a floured work surface;  flatten it with the palm of your hand.  It should be about 3 inches in diameter.  Once you've flattened each ball, start with the first ball you flattened and roll it thin, about 1/8th inch thick. Repeat this process with all 16 tortillas.  I stacked mine loosely on a plate.  Heat a skillet well on low-med heat.  Add a little oil or lard.  You should only have to do this once.  Fry each tortilla 1-2 minutes each side.  When you see little brown spots on the cooking side, it will be time to flip it to cook the next.  As each tortilla is completed, remove and put on a plate and keep covered by a towel.  Makes 16 tortillas.
